  3. Add peanut butter, eggs, milk in the centre of the mixture and slowly stir until the mixture is combined.
  4. Spoon mixture into prepared muffin pan.
  5. Place in the oven and cook for 25 minutes or until a skewer inserted in the centre of the muffin comes out clean.

Don't thaw them before you stir them into the batter. Trust me, you won't taste or see it at all. It's just like adding spinach to your favorite smoothie and adds a wonderful boost of veggies. It took me a few more tries to get the proportions just right so that the muffins had the right texture. But I'm happy to report that after four dozen muffins ( heh ), the final version of these Healthy Blender Applesauce Muffins turned out light, fluffy, and absolutely delicious!
