In a deep pan / kadhai, heat the oil for a minute on medium flame. Add chana dal, urad dal and mustard seeds. When the mustard seeds splutter, lower the flame and add cashewnuts, asafoetida, curry leaves and ginger-chilli paste. Heat the pan, and pour in the cooking oil.

Instructions to make Simple Potato Sabji (South Indian Style):
  1. Boil the potatoes, peel the skin and cut it into cubes. Keep aside. - - In wide kadai add oil. Once hot add mustard seeds, cumin seeds, 2 pinch hing, Turmeric powder, chilli powder,green chilli and ginger. Saute for one minute.
  2. Now add chopped tomatoes and saute until mushy. Add cubed potatoes, coriander powder, cumin powder, sugar and salt. Saute nicely. - - Cook until potatoes turns crispy and roasted. Mix every two minutes. Same time don't break too much.
  3. Garnish with coriander leaves and serve hot.

When the mustard seeds splutter, lower the flame and add cashewnuts, asafoetida, curry leaves and ginger-chilli paste. Heat the pan, and pour in the cooking oil. Once the oil is hot put the mustard seeds and wait for them to splutter. Add Cumin seed, asafetida, curry leaves, chopped green chilies and add the sliced onions and mix it well. Add salt to quicken the cooking process, mix it well and cover the pan with a lid.
