Instructions to make Gutte Ki Sabji:
- Add salt, carrom seeds to besan and by adding water make very soft dough.
- Add kadai on flame and add some water to boil then put thin rolls of besan and cover it with a lid for two minutes.
- Take out and cut into fine slices and keep them aside then make masala gravy by using onion tomato, garlic and other spices, add gutte and stir it for awhile then add remaining boiled stalk of gutte to the gravy and add curd also, cook for five minutes add garam masala and garnish it with coriander leaves.
- Serve it hot with chapati or rice, it goes well with both.
Gattes are cooked gram flour dumplings which are added to a spicy curd based gravy. If you run out of vegetables, you can make this gatte ke sabzi as it does not require any vegetables. Adding onion and garlic is also optional. Gram flour dumplings flavoured with dry spices, steamed and then dunked into a yoghurt based curry is a traditional Rajasthani speciality.
