- Get 2 tbsp tomato puree
- Prepare 3/4 can of best plum tomatoes,
- Prepare 250 ml vegetable stock
- Prepare 2 tbsp not heaped, of your favourite Masala Powder. I usually use Kolhapuri Masala but Graram Masala will do
- Take 2 tbsp fresh chopped coriander (cilantro)
- Take 50 ml coconut cream
Add in the curry powder, garlic powder, ginger powder, onion powder and salt. The crumbled tofu gave it the texture and protein of meat, and the sliced mushrooms added great texture too. - Add the tomatoes and break them down gently
- Add the stock and simmer gently if using meat for about 90 minutes until meat is tender . If using tofu make sure it is heated thoroughly through, add half of the coriander.
