  1. Get Batter (wet)
  2. Make ready 200 ml ice cold water
  3. Take 1 cup all purpose flour
  4. Prepare 1 large egg (optional)
  5. Prepare Batter (dry)
  6. Get 1/2 cup wheat flour
  7. Take 1/2 cup rice flour
  8. Prepare 1 teaspoon corn starch

  10. Take 1/4 orange pumpkin (medium sized)
  11. Take 1 handful longbeans
  12. Get 1 carrot
  13. Take Dipping sauce
  14. Make ready 2 tablespoons concentrated dashi stock
  15. Take 1 tablespoon soy sauce
  16. Take 1 tablespoon mirin
  17. Prepare 1 tablespoon sugar
  18. Get 5 tablespoons hot water
  19. Get Frying oil
  20. Prepare Any mild/ no taste vegetable oil will do. Add sufficient amount for deep frying

Instructions to make Very Crispy Veggies:
  1. Cut up all your veggies. For carrots and long beans you can cut them up into 2in long strips. For the pumpkin you can make slices out of it.
  2. To prepare the wet batter, add the cold water and flour together and mix in the egg if needed.
  3. For the dry batter, mix the wheat flour, rice flour and corn starch together.
  4. To prepare the dipping sauce, stir in the sugar with the hot water. Once dissolved, add in the dashi, mirin and soy sauce. Set aside for serving later.
  5. Dip your veggies into the wet batter and then coat it with the dry batter. There will be some lumpy bits in the process. Those are the good bits. Press those bits evenly on your veggies and set aside for frying. Also if you like your oil to be clean, you can use a strainer to strain it inbetween frying session.
  6. Let it cool well and drain off the excess oil with paper towels. These veggies can remain crispy for up to 2 hours. Now you can enjoy them with the dipping sauce and pair it with rice/ noodles.
