This semi-dry dish is made with a combination of button mushrooms, onions (double the amount of mushrooms), tomatoes, ginger, garlic, chili peppers, oil, and powders made from red chilis, turmeric, coriander, and cumin, along with garam masala spices Mushroom do pyaza is a semi dry veg preparation made with button mushroom, lots of onion and tomatoes. It goes very well with dal makhani and lachha paratha. It is mildly spicy and addition of extra onions makes it very crunchy. It's a medium spicy gravy and it has mild sweetness because of the addition of fresh cream.
Instructions to make Mushroom do pyaza:
- First cut stems of mushroom and boil it in warm water for about 5-6 minutes. Drain the water.keep it aside.
- Now in a pan take add 1 tsp oil, then add cube size onion,saute it until they becomes transulate.Don't over cook.keep them aside.
- In a grinder take cashew and melon seeds. Grind it well and make fine powder.
- Now in a kadai take 1 tbsp oil,then add cumin seeds,badlega and big caradmom..Now add ginger garlic green chilli paste. Saute it 2 minutes then add chopped onion. Saute it for about 5 minutes.Then add turmeric powder,coriander powder, garam masala powder and red chilli powder and salt as per taste. Then add chopped tomatoes and cook until tomatoes becomes soft.
- Now add curd and cashwe melon seeds powder. Cook for 5 minutes. Then kasoori methi. Then add cooked mushroom and sauted onion cubes.add little water and cook for about 5 -6 minutes. Until oil starts saprates.
- Mushroom do pyaza is ready.
