- Make ready Tomato purée—2 tomato roughly chopped, 1 small pc ginger, 4 garlic cloves, grind it to a fine purée,
- Prepare 1/2 tsp haldi, dhania & red chilli powder, 1/2 tsp garam masala powder,
- Get 1 tbsp dahi, Pinch of amchur powder (optional), salt to taste, 1 tsp desi ghee,
- Prepare 2 med sized onion, diced, petals separated,

Bhindi do pyaza is a okra dish prepared with lots of onion, hence the name. Goes well with roti or rice.
Instructions to make Bhindi Do Pyaza:
- Take a wok, add 2 tbsp oil, heat it.
- Fry bhindi until light brown, keep aside. Also fry onion petals till translucent. Keep aside.
- Add more oil in the same wok, heat it. Now add chopped onions, stir fry till light brown.
- Add ginger garlic paste, add lil water, sauté it for a while.
- Now add tomato purée & salt, stir fry it for a minute. Lower the flame now, cover it with the lid, cook it until oil separates.
- Increase the flame now, add haldi, dhania & red chilli powder, also add lil water, mix it well, fry it till oil has oozed out.
- Now add amchur powder (optional) & garam masala powder, give a stir.
- Add dahi, mix it well, lower the flame, cover it with the lid, cook it till oil separates.
- Now add desi ghee, stir it nicely.
- Add bhindi & onion petals, stir fry it until bhindi becomes tender.
- Switch off the flame, take out in serving bowl, garnish it with chopped dhania patta.
- Have it with Roti or Paratha.
Bhindi do pyaza is a okra dish prepared with lots of onion, hence the name. Goes well with roti or rice. Quick video, step by step photos. I have tasted Bhindi Do Pyaza couple of times in restaurants. For a long time, I thought this is named so because we have to use two types of onion.
