This is a North Indian style karela fry recipe as I have used the spices which are generally used in North Indian cooking. Karela is also known as kakarakaya or bitter gourd or bitter melon. Bitter gourd onion fry - a great way to eat bitter gourd if you aren't a fan of its taste.
Instructions to make Karela Do Pyaja:
- Peel off bitter gourd layer and keep it soaked in salted water for 2 hours.
- Drain complete water of bitter gourd and cut it into 3 pieces.
- Heat up oil in a shallow pan and add sesame seed, fennel seed, ginger paste, garlic paste and green chilli paste and cook for 1 minute over low flame.
- Meanwhile chop onion finely and add in the above ground spices and sauté till the onion turn translucent. Besides, add bitter gourd and salt, as per your taste and cook on low flame for 20 minutes.
- In a bowl of 1/4 cup water, mix all spices and add in the above gravy.
- When cooked, switch off the flame and serve hot with flat bread (Chapati).
