To begin with this particular recipe, we have to prepare a few ingredients. You can cook mutton do pyaza using 11 ingredients and 5 steps. Here is how you can achieve it.
The ingredients needed to make Mutton Do Pyaza:
- Get 1 kg Mutton
- Take 3 Onions in 3 forms (sliced,paste and peeled small pickled onion)
- Get 2-3 tbsp ginger garlic paste
- Make ready 4 Tomato puree or paste
- Prepare as required Saboot garam masala(tejpatta,laung,dalchini,badi illachi)
- Take 1 tsp turmeric powder
- Make ready 1 tsp dhaniya powder
- Get as per taste red chilli powder
- Get to taste Salt
- Make ready 4 tbsp Curd for marination
- Make ready as required Mustard oil and desi ghee for cooking
Recipe variation can also be made by using vegetables instead of meat. In grinder,add garlic,ginger,onion,yogurt,red chili powder,cumin powder,paprika powder,turmeric powder,coriander powder and salt,grind well & set aside. In pot,add ghee and let it melt,add onion and fry until translucent. Add green cardamom and mix well.
Instructions to make Mutton Do Pyaza:
- Marinate the mutton f0r 1hr.Slice 3 medium sized onion,paste of 2 medium size onion and small peeled onion 8-10 pieces.
- In a pressure cooker heat oil and fry the onion till brown or golden brown in colour.Take out and keep aside.
- In the same oil add the saboot garam Masala when it starts spluttering add the masala paste (ginger,garlic,onion)along with tomato purée cook for 5 mins and add the powdered masala cook till the rawness gets over.Now add the marinated mutton and cook on medium heat covered.
- After 10 mins add the peeled onion again cover and cook,at this point the mutton will start releasing the water keep it on medium to low heat and cook till the water dries up,keep an eye and stir in between.
- When the mutton looks half done and the water evaporates add the fried onion along with salt and stir the mutton,after adding the salt the mutton will release the oil add water fr gravy as desired,water shouldd be Lukewarm and pressure the mutton till 2 whistles on high and simmer for 1/2 an hour.
In pot,add ghee and let it melt,add onion and fry until translucent. Add green cardamom and mix well. Add mutton mix boti and mix well until changes color. Mutton do pyaza is a traditional recipe liked by many people. It has a maximum amount of onion which is not fried byt cooked spkrinkled after the curry is ready.
