- Firstly wash, clean and dry all bhindis. Then cut in small round slices.
- Now heat up the 1 tsp of oil in kadhai on low flame. Add bhindi and cook till it changes colour. Remove from kadhai and keep aside.
- In the same kadhai, add remaining 2 tsp of oil and heat it on low flame. Once heated properly add ajwain, tej patta and cinnamon piece. Saute for 1 second and then add onions. Saute onions till it turns translucent.
- Now add ginger garlic paste, mix and cook for a minute. Then tomatoes and cook for a minute. Now add turmeric powder, red chilli powder, dhania jeera powder and salt. Mix all well and cook till tomatoes gets cooked completely and becomes soft.
- Now add prepared bhindi and mix all well and cook for 2 mins. Then add garam masala and kasuri meethi and further cook for a minute.
- Garnish with coriander leaves and serve with roti.
