Heat a wok or nonstick skillet over high heat. Add the onion, half of the garlic, chili, and eggplant. Reserve the rest of the garlic for later. Fish out the eggplants from the pan and set aside.

  1. So wash the aubergines and cut them into long strips. Add the salt and vinegar and mix these and leave aside for 15 minutes.
  2. Then mince the garlic and ginger. Prepare the onions and red dried chillis and keep aside. Prepare the sauce by adding soy sauce then add sugar cornflour and water stir this to a smooth consistency.
  3. Then using 20g of the cornflour coat the aubergines and mix well then add the rest of the cornflour making sure there are no lumps. Then fry these a few at a time. After you have fried them leave them aside. Then add 1 tbsp of oil to the wok add ginger garlic onions and chillies sauté these for 2 mins then add the sauce prepared earlier. Add the aubergines mix really well decorate with coriander serve warm tastes yummy…..

Reserve the rest of the garlic for later. Fish out the eggplants from the pan and set aside. Slice off the bottom and the top of the eggplant. Place the slices in a colander and sprinkle both sides generously with salt. Put the sliced eggplant into a shallow baking dish, then pour the marinade over top.
