Add the soy sauce and cherry tomatoes, stirring them in and breaking them up with your spoon. Once the prawns are mostly pink add the noodles and stir them in to coat in the sauce. Add the white part of the spring onions, the blanched carrot and cabbage, the noodles and the sweet chilli sauce. Mix the palm sugar and fish sauce until the sugar dissolves.

Add the white part of the spring onions, the blanched carrot and cabbage, the noodles and the sweet chilli sauce. Mix the palm sugar and fish sauce until the sugar dissolves. Stir in the lime juice, then set aside. Stir-fry for a few minutes until fragrant. Gently stir in the noodles and serve.
